Sugar free cherry banana loaf (almost guilt free)
Since the arrival of baby James we’ve been trying to create foods that are both suitable for adults and little ones. So this sugar free banana bread will be perfect if you’re doing baby led weaning (like we are) , as a snack for your toddler or kid, as well as for yourself!
I’ll start with saying that instead of cherries, you can add anything you want to this recipe – raisins, coconut, blueberries, walnuts and so on.
Here we go!
200g self-raising wholemeal flour (or plain flour with 2 tsp baking powder)
100g margarine or unsalted butter (for babies). I’ve used vegan margarine and it came out great!
4 medium size bananas
2 eggs, beaten
Add a handfull of frozen morello cherries, raisins, blueberries etc.
*Add a teaspoon of cinnamon for extra flavour
Step by step
Step 1. Pre-heat the over to 180C (170c with a fan)
Step 8. After placing the loaf in the oven, turn the heat down to 160C and leave it to cook for about 45 – 60min (keep an eye on it after 45 min, use a skewer to check if ready)
Step 9. After taking it out of the oven, let it cool in the tin for about 10 min before taking it out!
